Chef Paul Moran

Introducing the inaugural scholar

Paul was born in Vancouver, BC and at the young age of 26 he has already travelled extensively and worked in top restaurants, whilst establishing himself as an emerging star of Canada’s culinary scene.

Paul’s passion for fresh ingredients and for cooking with a connection to his surroundings shone through in his winning dishes at the 2013 Hawksworth Young Chef competition.

Paul has spent the last seven years working all over the world with his wife Stephanie, also a chef, travelling to culinary capitals such as Paris. Paul began his career as an apprentice junior sous chef at Vancouver’s West restaurant between 2004-2008, before undertaking a nine-month stint as chef de partie at the five-star Jumeirah Beach Hotel in Dubai. Paul spent 2008-2009 working as a chef de partie in Nice, France under Chef Jean Denis Rieubland at the Michelin-starred Chantecler.

During 2009-10 Paul once again put his bilingual skills to good use whilst working as chef de tournant at Laurie Raphael in Montreal and then travelling to Paris to spend two years, between 2010-12, as executive sous chef at Saturne restaurant – winner of the 2011 and 2012 Omnivore prize. Between September 2012 and April 2013 Paul divided his time with consulting work at Table in Paris and Source in Vancouver before taking on his current role as executive chef at the Outpost, a West Coast Fishing Club lodge where Paul manages and executes five-star dining for guests.

During his career Paul has also undertaken internships at top restaurants including Michelin-starred restaurants Keisuke, Pied-a-Terre and Relais Louis XIII. He has been invited to the Omnivore Festival 2011and 2012, Bocuse D’or 2010 and Alba truffle festival 2009 and between 2001 and 2011 Paul won more than 10 medals in local and international culinary competitions. Paul loves travelling and the great outdoors and his hobbies include foraging for mushrooms.

The respected Canadian chefs on the Hawksworth Young Chef Scholarship judging panel recognized Paul’s commitment, passion and talent at the competition – just as Paul enjoys searching for the perfect mushrooms for his dishes, the judges have carefully selected Paul as the winner of the inaugural search for Canada’s next culinary star.
